In the sequel trilogy Rey has clothes that make her blend in to her desert environment. In the force awakens trailer, she says "I'm no one" telling us she doesn't think she's anyone special and her clothing reflects that. She wears practical clothes that blend into her life. She doesn't expect to ever have an exciting life, and she wears the same clothes until the end of the movie. After she discovers her force powers, she changes to a resistance outfit, reflecting her belonging with them now, but there is still elements of her old outfit, like the arm bands and her hair in 3 buns. Her resistance ourfit with elements of her original outfit could symbolize her feelings of not being worth much. In the Force awakens, when she touches the lightsaber and has the vision, we see her as a child, with 3 buns in her hair. She keeps the buns in her hair for 15 years so her parents will recognize her when they come back for her one day. Only after Kylo Ren tells her through their force bond that her greatest weakness is her needing her parents, her hair changes.
