I heard this tip from a professor I had over the summer and I find it super helpful whenever I have something big thatโs stressing me out.ย
1. Place your hand directly in front of your eyes. Imagine that in your hand is everything that is stressing you out at the moment, whether it be tests, relationships, personal issues, etc
2. Breath in for a count of 4, and as you do so, move your hand farther and farther away from your eyes in a straight line until itโs as far from you as possible,
3. Hold for a count of 4. Take note of where your hand is now, how little space it takes up in your field of vision. Focus on other things in the room; the color of the walls, the shape of the furniture, the sounds going on outside.
4. Breath out for a count of 4. Your hand is everything that is stressing you out, and everything else you can see is the rest of your life. The things that are stressing you out right now can seem so immediate and overwhelming, but remember that it only makes up a small fraction of your life, and there are so many things left to look forward to.ย
5.ย Repeat as needed. Remember, youโve got everything well in hand.

iโve spent the past few weeks in quarantine figuring out pancakes! thought Iโd share my preferred method <3
INGREDIENTS:
125g all-purpose/plain flour
2tbsp sugar
2tsp baking powder
250ml milk
2tbsp vegetable oil + extra for frying
1 large egg
your favourite toppings!
INSTRUCTIONS:
Mix the flour, sugar and baking powder together in a bowl
In a separate bowl or jug, whisk together the milk, oil and egg
Slowly add the dry mixture to the liquid, whisking as you go
When your batter is ready, heat your frying pan and grease with oil (stick to a low-medium heat - if your pan is too hot the edges might burn before the batter is fully cooked)
Pour a dollop of batter onto the pan, be careful, it spreads quick!
Fry the pancake until it begins to bubble on the top - you can use your spatula to peek under the batter and see if the side is cooked
Flip the pancake carefully onto the other side and cook until browned again
When your pancake is ready transfer to a plate - covering with foil helps to keep them warm whilst you fry the others
Add your favourite toppings and enjoy!

ยผ cup lemon juice ๐
2 cups all-purpose flour ๐ผ
ยพ cup sugar ๐
1 tablespoon baking powder ๐
ยฝ teaspoon ground cinnamon ๐
ยฝ teaspoon salt ๐
1 egg, lightly beaten egg ๐ณ
ยผ cup vegetable oil ๐ฅ
1 cup fresh or frozen blueberries ๐
In a small bowl, mix milk and lemon juice; set aside.
In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Set aside.
Add egg and oil to milk mixture; mix well. Gently stir into flour mixture just until moistened. Fold in blueberries.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400 degrees F at 22-24 minutes or until center of muffin springs back when lightly touched.
