Crowley tempted Aziraphale into eating and drinking, so when metatron offers aziraphale a coffee and he takes it I'm thinking that could've been his way of seeing how "far gone" Aziraphale was from the heaven lifestyle, how sinful, or how corrupted earth and Crowley made him. The coffee wasn't mind control the coffee was a test and Aziraphale failed it.
